Ben wanted me to leave a note to say that we made this tonight with chicken thighs as the drumsticks were all out at the store. It took the same amount of time with the thighs. The temperature on the grill was 400 degrees F.

Just come back to make this again and saw your comment (six months later!) I guessed it was half the cheese but as you mentioned you had followed the recipe to the letter i just wanted to double check. I can be a bit of a modifier when it comes to cooking and the first time I made this I’m proud to say I followed everything just so. I’m rebelling a little today and going to try it in my rice cooker! It usually makes great risottos…..

I made this last night and it was super tasty. Even the kids – who turned their noses up when I mentioned ‘tuna’ – loved it. They aren’t big on raw spinach but that means Ben and I just got an extra helping of some greens. Very flavorful, and very easy. The next time we have a picnic to our local winery, I think this meal will be appropriate to bring along and enjoy with a glass of wine.

Very, very yum. I made this tonight and the whole family loves it. I froze what we didn’t eat, although I’m sure we could easily finish it off tomorrow Thanks for another great recipe! I will be making this one many times.

Very good. I made these last night for a our family and a friend that was joining us, with fresh tortillas and guacamole. Simple, fresh meal. I doubled the recipe and there was a perfect amount for the three adults and two kids. A note that Adelaide and Charlie loved the quesadillas as well, and they typically turn their noses up to cilantro and green onions

Cooked this for us and the inlaws tonight and it was a big hit. I used Orange Roughy and it was delicious. Thanks. I think you’ve kept me going with recipes this week – I’ve made hot cross buns, the pistachio meringues and now this!

Hot cross buns are in the oven so I’m scrolling through catching up. I can SO relate to this post Nat. That feeling of not being familiar with anything, of not being sure of your surroundings can really rock your boat for a while can’t it? I’m glad that you’re seeing the possibilities now, but don’t be too hard on yourself….I think 6 months to start feeling settled like this is pretty good going! The kids will be bigger, better individuals for the experiences that you’re giving them – and that’s a good thought. x
