I have a few really simple pasta dinners that I can whip up in very little time which require very little ingredients. Ideal for when I’m very short on time which seems to be happening a lot lately.
Steaming broccoli is much nicer than boiling but I make the exception for this recipe. My girls love broccoli, my boys love bacon and all my little kiddies love pasta and cheese so it is a winner with the kids. This isn’t fancy food but there is something about the whole garlic butter tossed through everything which makes it irresistible.
simple broccoli and bacon pasta
400g pasta spirals
1 head of broccoli, cut into florets
6 rashes of bacon, trimmed and sliced
3 tablespoons butter
1 clove of garlic, crushed
a good handful of grated Parmesan cheese
sea salt and freshly ground black pepper
extra Parmesan for serving
Cook the pasta in salted boiling water according to directions of packet. Add the broccoli to the boiling pasta water to cook for final few minutes then drain.
Heat a large frypan over a medium heat and fry the bacon until golden. Remove the bacon and set aside. Add the butter to the frypan. Once melted add the garlic and cook for a minute then take off the heat. Add the pasta, broccoli and bacon then toss with the garlic butter. Stir through the cheese and season to taste. Serve with extra cheese grated on top.
