Lemon Delicious Slice

I am very happy to now have this quick lemon slice in my repertoire thanks to Elizabeth who kindly emailed this recipe to share.  Not only was it really easy to whip together but it made one beautiful afternoon tea with a nice dollop of thick cream.  Even my mum was super impressed and got busy in the kitchen whipping up a second slice.

For this recipe, all that is required is to make a very simple base dough and two thirds is pressed into a slice tin.  Then you melt butter, sugar and lemon juice in a saucepan and then whisk in an egg and cook for a few minutes until thickened then pour over the base.  Finally just crumble over remaining dough and bake.  Too easy but the result is a one fine slice.  Dust a little icing sugar over and serve on dainty little plates with a nice dollop of thick cream. 1 cup self raising flour
1/2 cup caster sugar
60g unsalted butter
1 egg, lightly beaten

1/2 cup caster sugar
1/4 cup lemon juice
60g unsalted butter
1 egg, lightly beaten

Preheat oven to 180 degrees C.  Line a slice tin.

For the base, mix the flour and sugar in a mixing bowl then rub in the butter using your finger tips until mixture resembles coarse breadcrumbs.  Mix through egg.  Press 2/3 of base into the slice tin.

In a small saucepan melt the butter, sugar and lemon juice together over a low heat (don’t let it get too warm).  Add the egg and whisk quickly until smooth.  Increase heat and continue to stir until the mixture thickens then pour straight over the base.

Crumble over the remaining dough and bake for 20 – 30 minutes or until just golden on top.  Cool the slice in the tin.
