This is a good cookie for lunch boxes or afternoon tea snacks. I love putting rolled oats in as many things as I can for the kids as it is such a great source of energy and a good filler. If you aren’t keen on the chocolate chunks you could throw in handfuls of raisins, sultanas, cranberries, chopped dried apricots etc. Sometimes I will throw in a handful of desiccated coconut too or some chopped pecans or hazelnuts.
oat choc chunk cookies
125g unsalted butter, softened
1/2 cup brown sugar
1/2 cup caster sugar
1 teaspoon vanilla extract
1 cup rolled oats
1 cup plain flour
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
200g dark or milk chocolate roughly chopped
Preheat the oven to 170 degrees and line 2 baking trays.
Beat the butter and sugars together until light and creamy. Add the vanilla and the egg and beat until well combined. Stir through the rolled oats and sifted flour, baking powder and bicarb. Fold through the chocolate chunks.
Scoop tablespoons of the the dough and roll into a ball. Place on tray and press down slighltly to flatten. Bake for about 10 minutes until just slightly golden. They will set further as the they cool.
