Elliott and I had a day at home today as it has been raining all day. So we did a bit of baking together and made these yummy hazelnut and chocolate biscuits. Not that Elliott was really helpful but he loves the activity, the chatter and eating the stray choc chips.
My favourite chocolate chip biscuit is one that is crisp on the outside and chewy in the middle – this recipe is not quite like that. But I still love it. It has hazelnuts, coconut and choc chips – you can’t go wrong with the combination.
hazelnut chocolate biscuits

185 g unsalted butter, softened
1 cup (220g) caster sugar
1/2 teaspoon vanilla extract
2 cups (300g) self raising flour
pinch of salt
60g ground or finely chopped hazelnuts
60g chopped dark chocolate, or choc bits
1/2 cup (45g) desiccated coconut
Preheat the oven to 180 degrees C. Line 2 baking trays.
Mix butter and sugar until light and fluffy in a mixmaster. Mix in the egg and vanilla.
Add flour and salt and mix thoroughly. Stir in the hazelnuts, chopped chocolate and coconut. Roll into small balls or scoop dough with a small levered ice-cream scoop and place them on the trays allowing room for spreading. Flatten them slightly with a fork.
Bake for 12 minutes or until lightly golden brown. Leave on the tray to cool slightly before transferring to a wire rack to completely cool. Store in an airtight container.
