Buttermilk Pancakes With Caramel Sauce And Bananas

Levi was in charge of pancakes this morning and he is getting better every time. He used to specialise in making ‘pancake rollups’. A name he came up with to give his failed flipped pancakes some dignity. Essie thought they tasted better then normal pancakes – so sweet! But now he is mastering the art of the perfect flip.

We like to make Julie Goodwin’s Buttermilk Pancakes and occasionally we indulge in her caramel sauce with bananas. This morning we felt like indulgence. I did the saucepan of caramel sauce and the girls got the bananas ready. A group effort.

1 batch of buttermilk pancakes
sliced bananas to serve

caramel sauce

125g cold unsalted butter, cubed
1/2 cup brown sugar
1/2 cup pouring cream

Combine all the caramel sauce ingredients in a medium saucepan and sit over a low heat. Stir until the butter has melted and the sugar has dissolved. Bring to the boil, then reduce the heat and simmer, uncovered, for 5 minutes or until thickened. Set aside to cool slighlty.

    Used this caramel sauce recipe this morning, really easy, and turned out really well! I didn’t have any pouring cream, so I substituted with some whipped cream from a can, and some milk. Still turned out great! added a little cinnamon too and a shot of butter pecan syrup for flavor too, and put it over buttermilk pancakes and sliced bananas, yum! Thanks! <3

      Fantastic! The caramel sauce is brilliant over ice-cream too! You have opened my eyes – never heard of whipped cream from a can or butter pecan syrup! I’m so glad I don’t have access to butter pecan syrup because it sounds too delicious and too tempting. I am hosting a pancake breakfast for a bunch of teenagers this weekend and I was thinking of making this but bananas are so expensive here at the moment. Maybe caramelised apples and cream instead.
