Sherry Vinegar Salad Dressing

This is a dressing I have been making regularly since I bought the Meals In Heels cookbook. The sherry vinegar is the star but try and use a really good extra virgin olive oil. I have a bottle of Joseph olive oil that I only use for salad dressings and it is worth every cent.

60ml (1/4 cup) extra virgin olive oil
2 tablespoons sherry vinegar
1 teaspoon caster sugar
1 teaspoon dijon mustard
1 garlic clove

Place the ingredients in a glass jar with a lid. Season with a pinch of sea salt and some freshly ground black pepper and pop lid on. Shake well until sugar is dissolved.

    Where do you buy sherry vinegar from, can’t say I have ever noticed it before.

    Hi Kristy, I haven’t seen sherry vinegar at a supermarket. Just at delis and providores. If you live in Brisbane I picked some up at the Rosalie Gourmet Market. I have seen it around a lot.
    Hope you track some down.
