I made one of Donna Hays vanilla cupcake recipes – she has a few slightly different ones and now I can’t even remember which one I made. The cupcakes were then frozen until the night before the party and then me and my mum quickly iced them (while the party kids were busy at pass the parcel), popped a pink spotty flag on top and voila! Stress free birthday cake. We put out bowls of mini marshmallows, smarties, sprinkles etc and let the kids go for it.
The icing was another Donna Hay recipe.
whipped vanilla icing
- 250g butter
- 2 cups (320g) icing (confectioner’s) sugar, sifted
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Place the butter in the bowl of an electric mixer and beat for 6–8 minutes or until pale and creamy. Add the icing sugar, milk and vanilla and beat for a further 6 minutes or until light and creamy.
I didn’t whip it enough I don’t think. I made another batch today following the method in the latest kids issue which says to whip for 15 minutes after adding the icing sugar, milk and vanilla. A much lighter and whiter icing.
